Habit 1- Not heating up your pans
A home stovetop is very different from a restaurant stovetop and this is a factor to be taken into account when you heat your pans. Not heating them long enough would mean that you don’t sear the meat properly. This makes you miss out on the complex flavors that develop through browning of protein, along with the texture and color. Similarly, your sautéed vegetables will not jump around in the pan either. When they cook slowly, they lose their color, texture and flavor. Ido Fishman recommends that you give your pans some time to heat up before you add the food to avoid cooking problems.
Habit 2- Not seasoning your food right
Seasoning primarily refers to salt. When you are adding salt to your food, it is good to be cautious. After all, it is possible to add more, but you cannot really take it out. Nonetheless, this doesn’t mean that you let salt scare you. Most recipes indicate that you ‘season to taste’. This means that you rely on your sense of taste. Furthermore, experts like Ido Fishman will tell you that it also depends on the food itself. You won’t season a sauce the same way as you would season a steak. While figuring out the right quantity of salt can depend on experience, you can avoid under-seasoned food by tasting it before you serve and make adjustments where necessary.
Habit 3- Not reading the recipe

Have you ever begin preparing something and halfway through you find out that you don’t have one ingredient? What should you do then? Substitute it, or leave it out? The results could be quite unfortunate, depending on what you are making. It may not be feasible to drop everything and go to the store either. Thus, it is better for you to read the recipe first, so you know exactly what you need and don’t have to face such problems.
Habit 4- Not sharpening your kitchen knives
Having dull kitchen knives is a problem not because it can make chopping and slicing your food difficult; according to Chef Ido Fishman, the problem is that it makes cutting yourself easier. When you are using a dull knife, you will have to press down harder in order to force the blade through. Applying more pressure means the blade just might slip. You will end up cutting yourself and quite deeply too. This doesn’t mean that you have to learn how to sharpen knives yourself. There are professionals who do the job and you can get it done.
Habit 5- Not measuring your flour properly
A lot of recipes list the flour quantities in terms of cups, so it is not surprising that you may be tempted to measure flour this way. However, Ido Fishman and other experts will tell you that this leads to unreliable results. Scooping a measuring cup into the flour bag cannot give you accurate results. You end up taking 30% extra flour, so your recipe will be ruined. Using a digital scale is a much better option and do your measurement in grams.
